Mum’s Anzac Biscuits

1cup plain flour
1cup brown sugar
1cup rolled oats
1cup dessicated coconut
125gm butter
2tbs golden syrup
2tbs boiling water
1/2tsp bicarb soda

Preheat the oven to 170C
Combine all the dry ingredients, except the bicarb, in a bowl.
Melt the butter and golden syrup together in a small saucepan over low heat.
Mix the bicarb and boiling water together and stir into the butter mixture then pour into the centre of the dry ingredients.
Mix with a wooden spoon to a moist but firm consistency.
Drop spoonfuls of the mixture onto greased and lined baking trays.
Press flat with a fork dipped in floor for chewy biscuits or press down with your fingers for crunchy biscuits.
Bake in the preheated oven for 10-15mins until golden.
Cool the biscuits on a wire rack until ready to eat.

Makes approximately 20 biscuits depending on how big you want them.
